butter (again)

so i made more butter and learned more things. i am getting kind of obsessed with making butter. i truly believe that i am the best butter maker in the world. i know this is probably not true but i don't know anyone else who makes it so i have an inflated opinion of myself. at any rate, my butter is damn good and i love making it. i wrap it up in little packages and hand it out and make people promise not to tell anyone else that i have given them butter.

this morning i switched it up and tried a new cream from snowville creamery which i picked up ($7.99/half gallon!) at whole foods. previously i had been using fresh market's store brand cream. can i just say that OH MY GOD is snowville creamery's cream good! i had no idea what a difference this could make. snowville creamery's cream is extremely rich and fresh and it makes such amazing butter.

tips: if you are using the saveur recipe i posted previously, you should not try to double it for double the amount of cream. i did this, and was able to successfully make butter, but damn did it take a long time to whisk. i think i was whisking for 20 min. my arm was sore as hell. also, do not quite double the amount of salt. the butter is slightly saltier than i wanted.

furthermore, using twice as much cream means that you are going to have a hard time getting all the buttermilk and water out. i don't know if it was just the difference in cream, but this time the cheesecloth squeezing part was much harder. and then i think i ended the squeezing too soon and started rinsing before it was ready, which made it get all soggy, and i had to squeeze it all out again.

bottom line: work with a quart of cream at a time and no more.

i am so obsessed with making butter that i want to do it all the time. i think it would be really fun to start an underground butter selling business. i would do no advertising and not sell it in any stores. my business would be totally word of mouth. i could meet people in dark alleys and exchange my butter for cash/drugs/their firstborn/etc. i could be a butter nazi and refuse people butter if i was not in the mood. people would trek to cincinnati from far and wide just to get a taste of my butter. ok, clearly this is not happening, but i do love my butter.

oh yes. i am asking for a hand mixer so that the whisking part will not be hell anymore.

where will you be and when?
