my mom sandy and me. without her there would be no get in mah belly, and what a world that would be.i don't think i have shared any of my mom's recipes on here yet so in honor of mother's day here is one. this is a pretty simple recipe but i love it and i make it constantly. it is perfect for making a big batch and taking it to work for lunch. i like to heat it up in the microwave for about 20-30 seconds before eating it so it's not too cold.
mom's tuna pepper pasta
1 lb. pasta (penne, rotini, or bow ties all work)
1 6 oz. jar of roasted red or yellow peppers, sliced into strips
1 can of tuna packed in oil (sometimes i use 2 cans)
1/4 c. red onion, chopped or sliced thinly
6 T. olive oil
3 T. red wine vinegar (i usually use more)
1 t. dried basil
1 t. salt
1/4 t. pepper
mix oil, vinegar, basil, salt, pepper, and onions in a large bowl. cook pasta, drain, cool with water. add pasta, peppers, and tuna to the bowl. mix it all together. eat.
my sisters and i used to love this recipe growing up and we would clamor for it all the time. it's super easy and delicious and i can see how it would appeal to a busy mom with loud children.
